Kari Underly and Megan O’Connor, co-founders of Muscolo Meat Academy, spoke to the Chicago Tribune about their new butchery school. Set to open this September, the Academy offers a 12-week program and certification with integrated learning that includes all aspects of butchery, from entrepreneurial business skills to hands-on training from leading butchers in the industry.
“A big part of what we’re offering is not just school but the quality skills that you need and the quality stamp you need to go with it,” said O’Connor, to the Chicago Tribune. “Today’s world doesn’t really provide for the apprenticeships of old for this trade.”
